Gilles started learning to skate in 1994. She skated with Timothy McKernan earlier in the year on a trial basis before joining forces with him in January 2003. They participated in their first competition in 2004 and took home a bronze medal. In 2005, they won the title of intermediate dance champions. The team won the junior pewter medal at the 2007 U.S. Championships, and then silver at the 2008 U.S. Championships. They announced the end of their partnership on May 22, 2008. Physically, Gilles had outgrown McKernan, and so the relationship ended.

Zachary Donohue and Gilles collaborated during the summer of 2008. They made their international debut at the Ostrava, Czech Republic, ISU Junior Grand Prix, which they won. In their second competition, which was held in Cape Town, South Africa, they won silver. In the junior division of the 2009 U.S. Championships, they won bronze.

Gilles/Donohue, who won the national bronze medal twice, placed ninth at the 2010 World Junior Championships. They announced their breakup in May 2010. Years after their relationship ended, Gilles said that she and Donohue were “very similar – very emotional and driven – but it didn’t work for us. Despite our best efforts, it just wasn’t the right partnership for either of us, despite how hard we tried to make it work.

Since there was little chance of finding a new partner, Gilles made the decision to move to Los Angeles. After appearing in the Simple Plan band’s music video for the song “Can’t Keep My Hands off You,” she was given the opportunity to play Rapunzel in Disney on Ice’s production of Tangled.

Canadian ice dancer Paul Poirier got in touch with Gilles to arrange a tryout. The two announced on July 27, 2011, that they will be teaming up to represent Canada. In their first season, they were unable to compete internationally because Gilles needed a release from US Figure Skating. They made the decision to train with Carol Lane at the Scarboro Figure Skating Club at the Ice Galaxy in Scarborough, Ontario. Their free dance was choreographed by Christopher Dean in Colorado Springs at the beginning of June.

In September 2012, Piper Gilles and Poirier won gold at the US Classic. Their Grand Prix assignments were the 2012 Skate Canada International and 2012 Trophée Éric Bompard. Prior to taking home silver at the 2013 Canadian Championships, they placed fourth and sixth, respectively, in both events. They received a bronze medal in the free dance at the 2013 Four Continents Championships, placing them fifth overall. At their first World Championships, held in London, Ontario, they came in eighth place.

Poirier suffered a serious ankle injury in May 2013, delaying the team’s season-preparation efforts. Their assigned competitions for the 2013–14 Grand Prix season were the NHK Trophy, where they placed fifth, and the Rostelecom Cup, where they placed sixth. As of December 2013, Gilles was a citizen of Canada, which allowed her and Poirier to compete in the Olympics.

Due to Poirier’s injury, the couple’s performance at the 2014 Canadian Championships was hindered, and they were not chosen for the Canadian Olympic team. After some time had passed, Gilles would concur that the result “was definitely disappointing… We didn’t want that big upset to change our goals in the future, and I think that made us stronger, and more comfortable with each other because we really had to lean on each other. So I think it made all of us closer and better as athletes, and more well-rounded.”  Instead of the Olympics, they were sent to the Four Continents Championship in 2014, where they took second place to Gilles’ former partner Donohue and his new partner Madison Hubbell.

Gilles/Poirier won silver in both of their Grand Prix competitions, the 2014 Skate Canada International and the 2014 Trophée Éric Bompard. In 2014–15, they were invited to compete in the Grand Prix of Figure Skating Final, where they placed sixth. At the 2015 Canadian Championships, they came in second place behind Kaitlyn Weaver and Andrew Poje. At the 2015 World Championships, the two placed sixth, ending their season.

Gilles/first Poirier’s triumph of the year came in the form of the 2015 Ondrej Nepela Trophy. After taking home the bronze at the 2015 Skate America and the silver at the 2015 Trophée Éric Bompard, they earned a spot in the Grand Prix Final as second alternates. following her second consecutive national silver medal at the Canadian Championships in 2016.

Elements of the brief dance choreography that made its Boston debut and was selected by the ISU as a new pattern dance known as the March are credited to Gilles, Poirier, their coach Carol Lane, and choreographer Juris Razgulajevs.

Tessa Virtue and Scott Moir’s return to competition in the 2016–17 season affected the performance of the other Canadian ice dance teams. Gilles/Poirier won bronze at the 2016 Skate Canada International, 2016 Trophée de France, and 2017 Canadian Championships. The two made mistakes in their disco-themed short dance throughout much of the season, with Gilles falling at the 2017 Four Continents Championships and stumbling at the French competition. Gilles described the results as “physically challenging and absolutely taxing mentally.” They finished eighth at the 2017 World Championships in Helsinki.

Gilles/Poirier placed fourth in both of their Grand Prix assignments, the 2017 Skate America and the 2017 Rostelecom Cup. As a result, the two made the decision to switch their free dance routine from a James Bond routine to a film noir routine in the middle of the season. Poirier described it as “a more accessible vehicle going into the Olympics, and one that (fans) can more readily relate with.”
